Hunting is not so much about prey but always about excitement and strong emotions. At the same time, the question of what to do with prey, how to prepare it properly and correctly is always acute. Game cooking is a separate kind of culinary art, requiring a special approach and experience. Something that Alexander Volkov-Medvedev, Ruski's chef, is eager to boast to their guests.
From November 15 to December 3, a special menu is launched. It combines game dishes and wine specially selected by our chef sommelier Lev Konev.
Enogastronomical duets feature unique wines produced by cult wineries and limited either by the number of issues or the best years. What is important, some positions within the seasonal offer are also served by glass which is truly rare for such outstanding wines.
So, the chef sommelier picked up La Gardy Chateau Unang 2010 (1760/7800 RUB), a very rare wine with only 1000 bottles produced, to accompany elk with pearl barley, sorrel, and raspberry (1730 RUB).
The second dish of our hunting menu is wild boar hind quarter simmered in cherry beer with buckwheat, and celery root (1230 RUB) which is paired with a delightful Barolo Bussia Riserva. Barale Fratelli (15600 RUB) of extremely successful vintage of 2004.
Reindeer tenderloin with leeks, and cherries (1370 RUB) is accompanied by a powerful Vina Bosconia Reserva. Lopez de Heredia Vina Tondonia (1760/7800 RUB) 2005, the wine that is produced by one of the most famous wineries of the Rioja region.
The last dish in our special menu is roe deer steak salad with macaroni chips (1230 RUB) harmoniously complemented with the elegant red Chinon Le Puy. Domaine Raffault (8700 RUB) 1998, one of the most outstanding wines of the Loire Valley.
